Tomato Sauce

Ingredients (serves 6):

3 tbsp. (45 ml) of olive oil (see Useful tips: Cooking oil)
2 to 3 garlic cloves, chopped (see Useful tips: Garlic)
1 small onion, chopped
3 x 400 g Cirio canned diced Italian tomatoes (or other Italian brand)
1 tbsp. (15 g) of sugar
½  cup (125 g) of fresh basil leaves
1 tsp. (5 g) of salt
½ tsp. (2.5 g) of cayenne pepper flakes or 1 peperoncino, chopped

Heat the olive oil in a big pot. Sauté the garlic and onion for 1 minute. Add tomatoes, basil, peperoncino or cayenne flakes, salt and sugar. Mix well and simmer for 25 minutes. Let cool then mix with a hand blender or food processor until smooth consistency. Add salt to taste.

Freezes well.

With pasta:

Cook the pasta of your choice, approximately 100 g per person (see Useful tips: Pasta "al dente"). Serve 3/4 cups (185 ml) of sauce per person (see Useful tips: Sauce). Garnish with gratted parmigiano reggiano (see Useful tips: Parmigiano reggiano), a few basil leaves (see Useful tips: Basil) and a drizzle of extra virgin olive oil from Italy (see Useful tips: Olive oil from Italy).

With meat or fish:

Pour approximately 1/4 cup (62 ml) of tomato sauce per person on meat or fish and serve with the side dish of your choice.
